Hofbräuhaus began in 1589 as the Bavarian court brewery under Duke Wilhelm V. That is the Hof in the name. The public beer-hall identity came later, especially after the brewery operation moved out and the Platzl building was remodeled at the end of the 19th century.
I still like it as a room, even with the noise and tourists, because the building keeps Munich's court beer history and public drinking culture in one place. Just do not read the room as untouched 16th-century architecture. It is a rebuilt, repeatedly adapted beer hall.
