Hamburg Old Town is not a preserved medieval core. The Great Fire of 1842, wartime bombing, and postwar rebuilding removed much of the older fabric. The history that remains is fragmented: Rathaus, churches, canals, merchant houses, and later commercial blocks.
I would use it as a route rather than a single square. Rathaus, St. Petri, St. Jacobi, St. Nikolai, Deichstrasse, then Speicherstadt gives a clearer picture of Hamburg than hunting for an untouched old-town center.
